Wassail, coming from the old Norse ves heil for be hale, is a mulled beverage from English tradition of wassailing or a drinking ritual intended to ensure a good apple harvest the following year. Some traditional recipes call for ale or mead to be mulled with apples and in some recipes frothed eggs are added with spices and sugar. Made into great wassail bowls, these would be shared with the singers who went from house to house. With this rite and practice in mind, and my abiding love for all things hot and mulled in the chilly and dreary months, I wanted to make a mulling spice blend that would do the apple gods proud. This blend will work excellently in a variety of beverages to pour out for a plentiful harvest for next year.

These mulling spices can be used in apple cider, red wine, ale, mead, or anything you desire to mull! I would suggest using 1-2 tablespoons per 2 cups of liquid to be mulled for at least 10 minutes. Going longer certainly wouldn’t be amiss and I’d recommend if mulling ale or wine to add a kiss of honey right at the end to counteract the bitterness you’ll find after mulling for any length of time.

 

Ingredients:

Apple pieces, candied ginger, allspice, cinnamon, orange peel, black pepper, star anise, clove, rosemary, and bay.

All ingredients are organic.

There are two jar sizes available: small (3.75 oz by volume), large (10 oz by volume)
