Wassail! wassail! all over the town,
Our toast it is white and our ale it is brown;
Our bowl it is made of the white maple tree;
With the wassailing bowl, we’ll drink unto thee.

Wassail, coming from the old Norse ves heil for be hale, is a mulled beverage from English tradition of wassailing or a drinking ritual intended to ensure a good apple harvest the following year. Some traditional recipes call for ale or mead to be mulled with apples and in some recipes frothed eggs are added with spices and sugar. Made into great wassail bowls, these would be shared with the singers who went from house to house. With this rite and practice in mind, and my abiding love for all things hot and mulled in the chilly and dreary months, I made a mulling spice blend that would do the apple gods proud. These bitters take my Wassail mulling spices and turn them into a handy flavor additive to add to the same beverages you would normally mull and opens a lovely flavorful world of possibility with the medium of a bitter.
Bitters make a lovely flavor addition to seltzer drinks, herbal mocktails, cocktails, or as a unique sense experience! These bitters may also be used as a classic digestive bitter with a few drops on the tongue. Each bottle contains 1oz of liquid.
Alcohol infused with apple pieces, candied ginger, allspice, cinnamon, orange peel, black pepper, star anise, clove, rosemary, bay, and gentian.
